mmm... duck fat


Holy shit, I can be a genius of a fat bitch sometimes. 

A few nights ago I made duck a l'orange, which required me to marinate duck in orange juice, orange zest and soy sauce. I saved the flavour-infused fat left over and roasted some kipfler potatoes in it. 

Winter lunch perfection. 

(It makes my gluttony ok if I have a green salad on the side, yeah?)
